

Summer, Sun, Picnic — Savva and «Green Lake» Invite Guests
Savva's head chef Andrey Shmakov and his friends — Mirko Dzago,
Claudio Pirovano, Tom Halpin, Nikanor Veira, Andrey Zakharov, Ivan
Glushkov, Leonid Zakharov, and Lolita Samoletova — invite guests to a
picnic: a series of summer gastro-dinners in six hands will take place at the
countryside club «Green Lake».
The head chef of the famous Michelin-starred Savva restaurant Andrey
Shmakov and the private countryside club «Green Lake» have teamed up to
host three gastronomic dinners in June, July, and August amidst an idyllic
setting: fresh air, green meadows, chaise lounges by the water, and songs
under the stars. Guests will enjoy a retreat far from the bustling city and
immerse themselves in the unique culinary traditions of picnics from Italy,
Australia, Argentina, and, of course, Russia. Professional chefs and
famous food journalists, who are well-versed in cuisine yet free from rigid
frameworks and conventions, will be cooking for them.
«Green Lake» club, with its two-story restaurant designed in alpine chalet
style, beach area, and Russian bathhouse (Russian banya), is located 40
km from Moscow and operates as a one-day escape, offering guests a
chance to break away from the city's routine, recharge, and enjoy nature.
The first picnic, dedicated to Russian traditions, on June 15, is organized
by Savva's head chef Andrey Shmakov, «Green Lake» chef Andrey
Zakharov, and the creator and editor-in-chief of the gastronomic project
«Sol» Ivan Glushkov. The menu features dishes made from farm-fresh
produce, seasonal vegetables, and fruits that harmoniously complement
the summer table. For starters, guests will be served potato pancakes with
pike roe, sour cream, and fresh green onions, sturgeon roe with
cucumbers, sweet tomatoes with sorrel, raspberries, and burrata, and, of
course, young seasonal vegetables — radishes, asparagus, cucumbers,
and carrots with refreshing tzatziki sauce and sumac.
Main courses, true to the picnic tradition, will be grilled— sturgeon with
herbs in a white wine and caviar sauce, stewed rabbit with morels, veal
liver with sweet onions, raspberries, and cherries. For dessert, the chefs
offer guests a delicate meringue roll with seasonal berries and salted
caramel, and mulberries with granola and goat cheese cream.
Complementing the dishes are classic cocktails made with b blended
spirits from the Gastronom brand. Passion Star,
with a separate shot of
prosecco and Blend No. 4 with notes of coriander, bay leaf, lime, and pink
pepper; Bloody Mary with Blend No. 7, featuring rosemary, smoked
paprika, pink pepper, and dried tomato; and No. 9 with tonic, made from a
special dessert liqueur with aromatic spirits of honey, walnut, lavender, and
bergamot.
Although the dinner is scheduled for the evening, guests are encouraged to
arrive earlier to build up an appetite by leisurely exploring the «Green Lake»
grounds and enjoying all the benefits of countryside leisure.Guests can
enjoy a beach area with a heated pool, chaise lounges, umbrellas, and
wicker furniture, as well as a terrace with views of the lake and forest, and
walking trails for active recreation enthusiasts.
To ensure plenty of energy for a day full of nature experiences, around
noon, guests will be served beetroot soup with kefir, young potatoes with
wild garlic, broth, beef confit sandwiches from Andrey Shmakov's street
food project «Shmak,» and tempura shrimp with mint and curry yogurt.
On July 20, the picnic will follow the best Italian dining traditions, led by
chefs Mirko Dzago of the restaurants Onest and «Aist,» Claudio Pirovano of
La Bottega Siciliana, and gastronomic journalist Leonid Zakharov, who also
writes the column «Desperate Househusband» on kp.ru and runs the
Telegram channel «That Man at the Table.»
A duo from Australia and Argentina — chefs Tom Halpin (Maya, Layerz
Bakery, Layerz Cafe) and Nicanor Veira (Olluco) will conclude the dinner
series on August 10. The event will be accompanied by Lolita Samoletova,
a gastronomic reviewer for Business FM and a jury member of the «Silver
Triangle» young chefs competition.
The menus for the dinners on July 20 and August 10 will be announced

It is important to note that at «Green Lake» club, special emphasis is placed
on high service standards and safety. Outside of events, entry to the
property is only possible with a prior reservation.
Chamber picnics for 25 guests will be held on the territory of the Green
Lake.

Summer Terrace at SAVVA Restaurant
The legendary SAVVA restaurant (1 star in the MICHELIN Guide Moscow
2022) has opened its summer terrace. This cozy 80-seat space, decorated
in warm pastel tones and filled with flowers, creates a serene atmosphere.
Thanks to the air circulation system and water mist sprayers, guests can
enjoy a unique microclimate.
A special pleasure and a unique highlight of the terrace is the stunning view
of the Bolshoi Theatre, impressive both in bright sunlight and in the glow of
evening lights.
The creative minds behind the project are restaurateur Arkady Novikov and
head chef Andrey Shmakov. On October 14, 2021, SAVVA was awarded a
Michelin star in the MICHELIN Guide Moscow 2022. On November 9,
2023, it took first place in the TOP-10 list by the WHERETOEAT Moscow
2023 awards. On April 16, 2024, the restaurant secured first place in the
TOP-10 at the WHERETOEAT Russia 2024 awards.
The menu includes dishes that head chef Andrey Shmakov personally
enjoys preparing, and recommends to guests. The signature menu is
updated each season.
Another pride of SAVVA is its extensive wine list, featuring over 300
selections, from time-honored classics (Bordeaux, Burgundy, Tuscany) to
trendy biodynamic wines. Head sommelier Yanina Martynyuk (winner of the
«Sommelier of the Year» award at the 2023 Palm Branch of the Restaurant
Business awards) and her team help guests make the perfect wine pairing
choices for their meals. Yanina is preparing to launch a special selection of
rosé wines called «Summer. Love. Rosé» for the summer season.

On February 27 at 7:00 p.m., SAVVA will host a guest dinner event in
collaboration with top chefs from St. Petersburg, including Artyom and
Alexey Grebenshchikov, Ivan Frolukhin, Dmitry Bogachev, Anton Isakov,
Alexey Alekseev, and Valeria Skuratova.
Savva will turn into a gastro-train that will take you to St. Petersburg faster
than the «Sapsan.» The restaurant's chef, Andrey Shmakov, along with his
distinguished friends from St. Petersburg, is gathering all their Moscow
comrades for a dinner inspired by the authentic hits of the northern capital.
On February 27 at 7:00 PM, SAVVA will present an 8-course menu. The
kitchen will have 16 hands at work! There will also be a chef's performance:
each dish is its own story, and the author will take the stage to personally
present it under the spotlight. As a souvenir, guests will receive chocolate
medals, just like the ones we loved in childhood, and a portion of the
proceeds from the dinner will go to the Ratatouille charity fund.
The Michelin-starred SAVVA restaurant is located in the historic Metropol
Hotel and is named after the extravagant patron, collector, and
philanthropist Savva Mamontov, which fittingly defines the project's creative
character and passion for travel. The next adventure will take place on
February 27. SAVVA's chef, Andrey Shmakov, has invited seven of his
close friends—outstanding chefs from St. Petersburg—to join him in the
kitchen. On tour, under the code name «VVV Leningrad,» will be Artyom
and Alexey Grebenshchikov (Bourgeois Bohemians), Ivan Frolukhin
(Frantsuza Bistrot, Harvest), Dmitry Bogachev (Mr. Bo), Anton Isakov (La
biga pizza & pasta), Alexey Alekseev (Futurist, Inner), and Valeria
Skuratova (EM). Each guest will prepare a special dish inspired by the retro
aesthetics of St. Petersburg during the Soviet era and their fondest
memories of childhood. Even the event poster will be styled like Soviet
school photo albums—an adorable opportunity to admire the baby faces of
now-famous adults. Andrey Shmakov will also prepare his own «story.»
Each course will be accompanied by personal storytelling from the dish’s
author. The chefs will come into the dining room to engage with the guests
in an informal setting, sharing the conceptual idea behind their recipes and
answering any questions with ease.
So, what does Leningrad food mean to each of these chefs?
Let’s start with the appetizers. Valeria Skuratova chose a dish that will
evoke nostalgia for many—“Egg with Mayonnaise.” Except, there’s no
mayonnaise! Instead, there will be a sprat cream with chili and pickled
superfood okra. The egg itself will be quail, nestled in a “nest” of rye
croutons. Alexey Alekseev opted for an authentic Petersburg product, one
of the city's culinary symbols—smelt. The fish will not be fried to a golden
crisp but presented as ceviche, with a bold herb and jalapeño sauce, green
chili oil, and dried Uzbek tomatoes. A lightly salted pickle is also be a must.
For a heartier starter, Artyom Grebenshchikov will reimagine the «Leningrad
Salad,» adding dried duck breast, porcini mushrooms, and vanilla to the
recipe. Childhood memories of early morning mushroom foraging trips will
come to life in Artyom’s creative version of this dish.
Two more appetizers continue the series of varied starters. Dmitry
Bogachev will play with another hallmark of the city, introducing guests to
Ivangorod lamprey, serving an elegant quiche with hollandaise and truffle.
Lamprey, though not the most attractive fish in appearance, is incredibly
delicious, coming from the waters of the Gulf of Finland. Anton Isakov will
recall his beloved grandmother’s specialties, reinventing her signature
kissel with «Morkis» ice cream. Instead of ice cream, there will be a goat
cheese cream, with fresh berries and spices accompanying the kissel.
For the main course, Ivan Frolukhin will present grilled foie gras steak with
glazed pumpkin and kale chips. What’s the connection to St. Petersburg?
In the early weeks after winter, family supplies were often running low,
leaving mostly root vegetables. Pumpkin, Ivan’s favorite, will be served with
a French twist. Andrey Shmakov will prepare a traditional «Leningrad
Rassolnik,» a dish he ate throughout his childhood and youth in communal
apartments. His luxurious version includes beef confit, duck hearts, fried
liver, and «Orzotto» with candied pickles on the side.
To end the dinner on a sweet note, Alexey Grebenshchikov will present the
iconic «Leningrad Cake» (a cake his mother used to buy from the «Sever»
confectionery, established in 1903), made with shortbread layers, chocolate
cream, jam, and signature «chapters» in the form of truffle caramel with
hazelnuts and pears.
A portion of the proceeds—1,000 rubles from each ticket sold—will be
donated to the Ratatouille Fund, Russia's first charitable culinary project. Its
mission is to teach cooking skills to orphans and children of parents with
disabilities, helping them learn to cook for themselves and their loved ones,
and possibly sparking a future career. The project organizes masterclasses
led by professional chefs and educators in various cafes and venues,
having already hosted over 600 events in cities like Chelyabinsk,
Yekaterinburg, Perm, Voronezh, Irkutsk, Moscow, St. Petersburg, and
Tyumen.

Michelin-starred SAVVA’s chef, Andrey Shmakov, has prepared a special set menu
for February 14th (10,000 rubles). For couples worldwide, Valentine's Day is the
perfect occasion for a romantic date. It’s no coincidence that each dish in the set is
made with ingredients known to awaken feelings: truffle, vanilla, seafood, and
other well-known aphrodisiacs.
The «I Want You» menu features 7 dishes designed to excite the taste buds and
emotions. An avocado tartlet with crispy potato and persimmon is served with a
red shrimp. Simple perfection is captured in a donut with sour cream and sturgeon
caviar. The taste of burrata with seared salmon is framed by asparagus velouté.
Protein-rich seared scallops are paired with pumpkin, honey, and vanilla. A king
crab claw is highlighted with cabbage and a piquant morel and truffle sauce. Duck
and foie gras raviolo is served with a confit duck heart sauce. The set concludes
with a Pornstar Martini dessert featuring champagne, passion fruit, white
chocolate, meringue, and vanilla.
As an aperitif, guests will be welcomed with a glass of sparkling wine — perfectly
complemented by a set of 6 oysters with lemon, ponzu, and raspberry vinegar at a
special price of 2,000 rubles. The digestif, Gastronom Espresso Martini, made with
Gastronom No.9 dessert liqueur, vanilla syrup, espresso, Galliano liqueur, and
grated parmesan, is a delightful finish.
The restaurant has prepared unique gifts that will pleasantly surprise couples who
order the signature set. One of the prizes is a night at the legendary five-star
Metropol Hotel, where you can touch history, indulge in aesthetic pleasure, and

In the creative collaboration between Andrey Shmakov, brand chef of the Savva
restaurant, and Yulia Trifonova (social media pseudonym Birdy.eats), one of
Moscow’s most sought-after food photographers, a limited collection of
long-sleeve shirts was born. These shirts promise to be the perfect New Year’s gift
for yourself and loved ones. The inspiration behind the merchandise came from
Andrey Shmakov’s winter set menu called «Time Machine,» featuring all the hit
dishes from a bygone era. The design idea is to associate the long-sleeve with a
tablecloth adorned with the finest plates from grandma’s cupboard and Crystal
Goose salad bowls. The result is both touching and stylish. The long-sleeve,

«Time Machine»: A New Year’s fairy tale in retro style — a winter set inspired by childhood memories.
In anticipation of the upcoming holidays, Savva restaurant has launched the winter
set «Time Machine,» based on the childhood memories of brand chef Andrey
Shmakov. It’s a whole performance that brings warmth and comfort to the heart.
When ordering the winter set, guests will be accompanied to their seats at table
that’s set exactly like in childhood photos, where the whole family is smiling, and
in the background, the TV is showing «The Irony of Fate» or the Kremlin clock.
The dinner menu includes a selection of cold and hot appetizers from childhood
memories: sandwiches with Riga sprats, red caviar, aspic, Olivier salad, «Herring
under a Fur Coat,» and another dozen delicacies like cervelat sausage, stuffed eggs
with sprat, and pike-perch in aspic. The main course is French-style meat, and the
dinner ends with 3 desserts: raviolo with pineapple and strawberry cream,
ginger-lemon marmalade, and tangerine jelly with Chantilly cream.
Orders must be placed 24 hours before the planned visit.

The Savva restaurant (1 Michelin star) was relaunched in October 2020. The project’s main visionaries are restaurateur Arkady Novikov and the restaurant’s chef, as well as the brand chef of the Metropol Hotel, Andrey Shmakov. The restaurant is named in honor of the famous philanthropist Savva Mamontov and is located in the Metropol Hotel opposite the Bolshoi Theatre.

Andrey Shmakov became the brand chef of the Metropol Hotel in 2013. Before that, he worked on European passenger liners and in restaurants in Tallinn — Le Bonaparte, Ribe, as well as in the Grand Hotel and Radisson SAS hotels. He was the chef of the prestigious Kadriorg restaurant in the historical Kadriorg Palace in Tallinn and «Laplandia» in St. Petersburg, one of the first restaurants of the New Nordic Cuisine in Russia. Andrey completed internships at the legendary Noma in Copenhagen and Chez Dominique in Helsinki.
